One of the things I love about having gone vegan recently is that it has made me eat so much healthier. Instantly all of those guilty pleasures (i.e. daily, heaping quantities of junk food) had no place in my life anymore.
By the same token, one of the things I didn’t love about making the switch to being animal product free was that it honest to God frickin HURT to go cold turkey off my junk food addiction. There’s an excellent New York Times article on the science of addictive junk food. If you haven’t read that, I highly recommend that you check it out. The food industry might as well be feeding us crack.
At any rate, the Starbucks on the ground floor of The Second City, my home away from home, has lost a lot of revenue thanks to my change of dietary habits; however, I’ve started baking my own, DELICIOUS, vegan treats!
I recently posted about the agave corn muffins and cacao bliss balls that I made. Well, this week I discovered a website with some AMAZING recipes for cookies!
The site “Daily Rebecca” had an amazing recipe for “The Best Chocolate Chip Vegan Cookies”. It looked promising, so I went ahead and made them. To my surprise, they were honestly some of the best chocolate chip cookies I’ve ever had! And I just went vegan a month ago, so the taste of other cookies are fresh in my memory! MY MOTHER even said that she liked them better than the recipe she was using!
Given the success of the chocolate chip cookies, I then decided to try out her recipe for Vegan Chocolate Peanut Butter Cookies, which I would call “Vegan Black Bean and Chocolate Peanut Butter Cookies”. They are simply out of this world. The cookie itself reminds me of an asian treat because they love sweet beans over in East Asia and the frosting is this creamy peanut butter goodness (Thank you, Earth Balance Buttery Spread!)
I’m going to continue baking and I hope to get to the point where I can make my own recipes!
